Udon are thick Japanese noodles made of wheat flour and have been part of Japanese cuisine for at least 750 years (a much longer tradition than Japanese Ramen). Udon noodles are hearty with a firm bite and soft texture and are a very popular dish in Japan. In this hands-on class you will learn to make Udon noodles from scratch, using techniques that have been used for generations. Japanese home cooks actually knead Udon dough with their feet due to the toughness of the dough. (Please be assured that this is a very hygienic process as we will be using sealed bags to knead the dough with!) Homemade Udon is much tastier than store bought options and has no preservatives or additives. The noodles will be served cold ("zaru" style) and we will prepare a variety of toppings as well as a special dipping sauce from scratch. In addition, I will teach you how to make tamago-yaki (a mini omelette with umami flavor) which is a very popular side dish in Japan.. After we finish cooking, we will enjoy the food that we have prepared with green tea. I limit this experience to a total of 4 people per class. I want to make sure that you have an intimate, hands-on experience.
I was born and raised in southern rural Japan and have been passionate about cooking from a very young age. I learned how to cook from my grandmother who taught me traditional Japanese home cooking. Cooking is my obsession and I often teach my friends Japanese cooking techniques. With this experience, I will teach you how to make traditional udon noodles from scratch which you will prepare with your own two hands. We will eat what we prepare with green tea.
