Born in Calabria in 1955, Carmine Cozzolino moved to Tuscany with his family at the age of 16, starting work as a kitchen hand in several Florence restaurants.
A lover of martial arts and currently 5th dan black belt in Aikido, he went to Japan when he was very young to become a master instructor in this ancient art and remained captivated by the land of the rising sun that was undergoing a strong economic growth in those years.
Discovering the Japanese passion for Italian food, in 1987 he opened his first restaurant in Tokyo under his own name "Carmine", which quickly became an important reference point for all lovers of the popular cuisine typical of Italian "trattorie" or eating houses. Having become a famous personality in Japan at the end of the 1980's, he was often a guest on television programmes and the media spoke of him as being the main exponent of Italian cuisine at the time.
Subsequently Carmine used all his experience to open 8 restaurants which he sold over the years and is currently the owner of the restaurants "Carmine" and "Sorriso", both in Tokyo.
In spite of his Japanese commitments continuing to take up much of his life, Carmine has never given up his ties with his homeland Italy and in 1991 he purchased the property of Villa Le Monache in the countryside near Florence to create a Cooking Academy and thus to pass on all the skills he has passionately acquired to aspiring Chefs or simply to people who love cooking with fresh and genuine ingredients, many of which are grown directly on his own land.
Carmine is undoubtedly a multifaceted character and loves the slow food culture, whose aims are to give back to food its right value, in harmony with the environment and with the territory.
