Besides running the Michelin-starred Keisuke Matsushima, the chef fondly known as Kei has opened the very good Japanese restaurant Saison and, most recently, this niçois bistro not far from the Negresco Hotel. Here you'll find impeccable versions of classic dishes such as roast cod with stockfish (a stew made with salted fish), gnocchi carbonara with black truffles, or stuffed quail with polenta, followed by desserts like ginger panna cotta or chestnut tiramisu. Prices are very reasonable for the quality, and the restaurant is decorated with works by local artists. Book a day or two ahead.

As a friend of mine says, it's like going to your grandma's to sample all her classic dishes. The Niçois food in this tiny, cramped dining room has hardly changed in more than 30 years. Drop by in person to reserve or take your chances by arriving early, and choose from the brief blackboard menu that changes with the seasons. No credit cards.

It's tricky to know where to eat on the touristy Cours Saleya, and Le Safari is the locals' safe choice, serving a range of niçois specialities. The terrace is one of the sunniest on this market square.
