Menudo, or pancita ([little] gut or [little] stomach, from Spanish: Panza; "Gut/Stomach") is a traditional Mexican soup, made with beef stomach (tripe) in broth with a red chili pepper base. Hominy, lime, onions, and oregano are used to season the broth.
